Pea Soup with Kielbasa
If you don’t have a slow cooker I highly recommend you get one because your dinner can cook while you’re at work and they can be used for so many recipes. Slow cookers, also known as Crock Pots, are relatively inexpensive to buy new or you can pick one up at your local thrift shop for very little. We just had this pea soup the other night and it’s super tasty. It’s the perfect hearty soup for the Fall and Winter and it’s healthy and delicious.
Ingredients:
- 2 cups of golden peas (soaked in water for approximately 4 hours or overnight if using conventional pot to cook)
- 2 cups of chopped carrots
- 1 cup of chopped celery
- One large onion finely chopped
- 1 ½ cups of cubed Kielbasa sausage (I recommend Red Barn’s)
- Salt and pepper to taste
Cooking Instructions:
Combine all ingredients in slow cooker or crock pot with 8 cups of water and cook on high for 6-7 hours (3-4 hours if using pot). Garnish with parsley if desired and salt and pepper to taste. Enjoy 🙂
